Made from rice refined three times after a process of gradual fermentation at a temperature of 12°- 15°C, it is devoid of residue flavors and smells.
Unpleasant bitter flavors and alcohol odors are removed using a cold filtering device.
Amino acids contained in the liquor add to the flavor of the dish.
